We've got some exhilarating news to share – Læsk recently embarked on a culinary escapade that's left us bubbling with excitement! Our journey took us to none other than noma, the 3-star Michelin culinary paradise that's known for pushing the boundaries of gastronomy through fermentation. So, fasten your seatbelts, kombucha enthusiasts, because we're about to take you on a delicious ride through the world of fermentation.

noma: Where Culinary Dreams Come True

noma needs no introduction; it's where gastronomic dreams come true. Renowned for its innovative approach to food and its deep appreciation for fermentation, noma has earned its stripes as a global leader in culinary excellence. The secret sauce? Well, in our case, it's kombucha.

Læsk Takes the Stage with Kombucha

And then there's us, Læsk, the Danish kombucha aficionados, a small dedicated team of nerds trying to squeeze some fermentation into the soft drink category. We've always believed that the best things in life are natural and fermented, and we pour that philosophy into every can we make.

The Perfect Pairing of Læsk and noma

When Læsk and noma joined forces, magic was bound to happen. We supplied noma with our kombucha SCOBY (Symbiotic Culture of Bacteria and Yeast) – the heartbeat of our craft. What came next was a gastronomic symphony of flavors, thanks to the artistry of fermentation. The dish itself "Crowberry SCOBY" was a young piece of SCOBY Mother (or baby, if you will) that had somehow been grown in crowberry; a small Swedish berry that grows among wild blueberries and it extremely hard to pick. We actually have a surprise too coming with this berry soon. It is not a sweet berry - it is tart and bitter but has a very distinct earthy vanilla flavor. A great combo with the well-balances sweet and sour SCOBY.
